Easy Strawberry Compote

This versatile strawberry sauce can be used in smoothies, on top of pancakes, on a yogurt parfait or on vanilla ice cream too. Try it this week!



Ingredients:
  • 1 package of strawberries (fresh or frozen) - hint: frozen requires less prep time
  • 1/2 cup of sugar
  • 1 tablespoon of vanilla extract
Lightly blend the strawberries together and leave it chunky if you want some texture in your sauce. Heat blended strawberries in a pan with sugar until sauce bubbles. Turn down heat and add vanilla extract. Enjoy!
