Vegetarian Mushroom & Curry Summer Rolls

My obsession with rolls continues. Recipe makes 3 rolls. Try this today!

 

  • 2 cups of finely chopped mushrooms (use your favorite)
  • 3 tablespoon of teriyaki sauce
  • 3 eggs 
  • 1 cup of cooked vermicelli noodles
  • 1/2 teaspoon of curry powder
  • 3 sheets of rice paper
Make a plain omelet with your eggs.  Saute mushrooms with Teriyaki sauce until well cooked and brown. Toss curry powder into cooked noodles.


 


Wet rice paper thoroughly and lay flat on plate, assemble ingredients, fold it like you would a burrito and enjoy!
